2005 Marked a Turning Point for Hatten Fish Farm
20 years since the first aquifer was tapped into, which became a constant source of cold, fresh water, the fish farm would experience some radical changes to meet an ever changing market place. It became evident that methods of reaching the consumer, as well as consumer confidence in the product, would demand special attention.
- application to the Canadian Food Inspection Agency
- addition of a second cooler to handle skids of fresh rainbow trout in both a dressed and
filleted state, ready to be shipped to market
- forklift and pallet cart added to enable a larger scale shipping procedure
- refrigerated transit was also incorporated at this time
- additional pinbone machine to provide more production
- Hoshizaki air cooled flaker ice machine with an automatic water filter intake
These preceding steps were taken in order to provide a safer and more consistant temperature control of the product from processing to market.
Health Benefits Of Rainbow Trout
Rainbow trout are an excellent source of Omega-3 fatty acids, according to Health Canada. Omega-3's are polyunsaturated fatty acids, scientifically proven to be necessary for the proper maintenance of human and animal health.
Although many grain products and plant foods are dietary sources of Omega-3 fatty acids, only one food can naturally give you the recommended dietary amount of D.H.A.- fish.
Long term consumption of oily fish (2-3 servings per week) has been scientifically proven to reduce the risk of heart attack and death from cardiovascular disease.
For a detailed list of numerous health related benefits please contact either Health Canada or the University of Guelph, Aquaculture Centre.
Recognizing Fresh Rainbow Trout
Quality trout is easy to recognize. Fresh trout never smells fishy, it smells fresh.
The eyes should appear bright and clear, almost alive. The gills should be reddish, and the skin covered with clear, slippery slime.
With very fresh trout, they should be so slippery that they are difficult to hold.
Fresh trout flesh will give slightly when you press them with your finger, then spring back into shape.
